製作良好的鳳凰單叢花香撲鼻,口感清爽,回甘快而強勁,喉韻清冽,飲畢齒頰留香,二十泡仍有餘香。

然而,如同人一般,獨特的性格往往是一體兩面的,鳳凰單叢的香氣迷人,但與其他茶種相比,本質較為苦澀,且滋味釋出極快,想要品嚐到芬芳卻又順口的茶湯,過與不及之間需要拿捏得當。

置茶量大,才能展現馥鬱飽滿的香氣,而快速出湯,則可降低她本質上的苦澀程度。

將條索型的茶乾「鬆散地」置入茶壺/ 蓋杯到「滿」後,輕柔撥動使茶葉能稍微下沉至壺底,單叢需高溫沖泡,每一泡都將滾水離火至沒有氣泡聲後注入,頭三泡都完全不等待,極快出湯,之後每泡可略略加長幾秒。這樣一來就可以喝到茶湯順口,奇香逼人且十泡不減的鳳凰單叢囉~

However, just as human being, unique characteristics often come with another side. Feng Huang Dan Cong is famous for its amazing aroma and floral fragrance, it is relatively bitter and astringent comparing to other teas. And the taste releases pretty fast while brewing. Thus, it takes some know-how to enjoy a nice cup of fragrant yet smooth Feng Huang Dan Cong.

The key technique of brewing Feng Huang Dan Cong is to put a large amount of tea, and brew it quickly!

Large amount of tea brings out the strong and saturated fragrance, while the short steeping time reduces the bitterness and astringency.

The traditional way is to put the dry tea LOOSELY in a teapot/ cover cup till it’s FULL. Gently shake up the cover bowl or tea pot to have the staking tealeaves collapse down to the bottom. Steep it with boiling water right after it rest still in every brew. Do not wait at all for the first three brews, and increase several seconds in each of the following brews. Voilà, a nice cup of Feng Huang Dan Cong with sensational aroma is ready to be served!
